  • 1 pound cremini mushrooms, sliced
  • 1 large yellow onion, finely diced
  • 4 garlic cloves, minced
  • 4 tablespoons unsalted butter, divided
  • ¼ cup all-purpose flour
  • 1½ cups heavy cream
  • 1 cup low-sodium chicken or vegetable broth
  • ¼ cup dry sherry or white wine (optional)
  • 2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)
  • 1 teaspoon fresh rosemary, chopped
  • ¼ teaspoon freshly grated nutmeg
  • Salt and black pepper to taste
  • For the crispy shallot topping:
  • 3 large shallots, thinly sliced into rings
  • ½ cup all-purpose flour
  • Vegetable or canola oil for frying
  • Pinch of salt for finishing

Instructions

  1. Blanch the green beans: Bring a large pot of salted water to a boil. Add the trimmed green beans and cook for exactly 3 minutes until bright green and still crisp. Immediately transfer to a bowl of ice water to stop the cooking. Drain well and pat dry with paper towels. Set aside.
  2. Fry the shallots: Heat about ½ inch of vegetable oil in a small deep pot over medium heat. Toss the sliced shallots with the flour and a pinch of salt until lightly coated. Working in batches, fry for 2-3 minutes, stirring occasionally, until golden brown and crispy. Transfer to a paper towel-lined plate and season immediately with salt. Let cool completely.
  3. Sauté the mushrooms: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the sliced mushrooms in a single layer and cook undisturbed for 3-4 minutes until they release liquid and start to brown. Stir and continue cooking for another 3-4 minutes until deeply golden.
  4. Cook the aromatics: Add the remaining 2 tablespoons of butter to the mushrooms. Once melted, add the diced onion and cook for 4-5 minutes until soft and translucent. Add the minced garlic, fresh thyme, and rosemary, and cook for 1 minute until fragrant.
  5. Make the sauce: Sprinkle the flour over the mushroom mixture and stir constantly for 1-2 minutes. Slowly pour in the chicken broth while stirring, scraping up any browned bits from the bottom of the pan. Add the heavy cream and dry sherry if using. Bring to a gentle simmer and cook for 3-4 minutes until thickened enough to coat the back of a spoon. Season with salt, pepper, and freshly grated nutmeg.
  6. Combine in the slow cooker: Add the blanched green beans to a 6-quart slow cooker insert. Pour the mushroom cream sauce over the top and stir gently until every bean is coated.
  7. Slow cook: Cover and cook on LOW for 2-3 hours or on HIGH for 1-1½ hours until hot all the way through and the sauce is bubbly around the edges.
  8. Add the topping: Just before serving, sprinkle the crispy shallots generously over the top. Do not stir them in. Serve immediately.

Notes

Don’t skip the blanching step—it ensures even cooking and bright color. Toast mushrooms properly in a single layer for best flavor. Season as you go for depth. For make-ahead, blanch beans, make sauce, and fry shallots up to two days ahead. Store shallots separately at room temperature. Add shallots just before serving to keep them crispy. If sauce is too thin, leave lid cracked for last 30 minutes; if too thick, stir in warm broth.
