  • 1 cup pumpkin puree (240ml), canned or fresh
  • 3 large eggs, room temperature
  • 1/2 cup plain full-fat Greek yogurt (120g), or dairy-free coconut yogurt
  • 1/4 cup honey or maple syrup (60ml), adjust to taste
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (90g), 70% cacao preferred

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with liners or grease lightly.
  2. In a medium bowl, whisk together almond flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.
  3. In a large bowl, whisk the eggs until blended. Add pumpkin puree, Greek yogurt, and honey or maple syrup. Mix until smooth and creamy.
  4. Gradually fold the dry ingredients into the wet ingredients gently with a spatula, avoiding overmixing to keep muffins tender.
  5. Carefully fold in the dark chocolate chips to distribute evenly without breaking them.
  6. Spoon the batter into the prepared muffin cups, filling each about 3/4 full.
  7. Bake for 22–25 minutes, checking doneness by inserting a toothpick into the center; it should come out mostly clean with a few moist crumbs.
  8. Let muffins rest in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to keep muffins tender. Use room temperature eggs for better rise. Toss chocolate chips in almond flour before folding to prevent sinking. If batter is too thick, add a splash of almond milk. Cool muffins completely before storing to prevent sogginess.
