  • ¼ teaspoon black pepper
  • 8 large romaine or butter lettuce leaves
  • 2 medium diced tomatoes (fresh or vine-ripened)

  • ½ medium red onion, thinly sliced
  • 1 ripe avocado, sliced or guacamole
  • Fresh lime wedges
  • Optional: hot sauce or salsa

Instructions

  1. Finely chop one medium yellow onion, mince 2 garlic cloves, roughly chop a small bunch of fresh cilantro, dice 2 medium tomatoes, slice half a red onion thinly, slice one ripe avocado, and cut a lime into wedges. Set aside for assembling tacos. (Prep time: 10 minutes)
  2. Heat a large non-stick or cast iron skillet over medium-high heat for about 2 minutes until hot but not smoking.
  3. Add 1 pound lean ground beef to the pan. Break it up into small pieces with a spatula. Cook, stirring occasionally, until browned and no longer pink, about 6-8 minutes. Drain excess fat if necessary.
  4. Stir in the chopped onion and minced garlic. Cook for another 3-4 minutes until onions soften and become translucent.
