Ingredients

Scale
  • 12 large eggs (at least a week old for easier peeling)
  • 8 slices thick-cut bacon
  • 1/3 cup mayonnaise (Duke’s or Hellmann’s recommended)
  • 1 tablespoon yellow mustard (or Dijon for more bite)
  • 1 teaspoon white vinegar (apple cider vinegar works in a pinch)
  • 1/4 teaspoon smoked paprika (plus extra for garnish)
  • 1/4 teaspoon fine sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 tablespoon fresh chives, finely chopped (for garnish)

Instructions

  1. Place the eggs in a single layer in a saucepan and cover with cold water by about an inch. Bring to a rolling boil over high heat, then turn off the heat, cover, and let sit for exactly 10 minutes.
  2. While the eggs sit, fill a large bowl with ice water. After 10 minutes, transfer the eggs to the ice bath and let chill for at least 5 minutes to stop cooking and make peeling easier.
  3. Cook the bacon: Lay slices in a cold skillet, then turn heat to medium. Cook for 6-8 minutes, flipping once, until deep golden and crispy. Transfer to a paper towel-lined plate to drain and cool, then crumble into small pieces.
  4. Peel the eggs under cool running water, then pat dry with paper towels.
  5. Slice each egg in half lengthwise and pop out the yolks into a mixing bowl. Arrange the egg white halves on a serving platter, cut side up.
  6. Add mayonnaise, mustard, vinegar, smoked paprika, salt, and pepper to the yolks. Mash with a fork until smooth and creamy. Adjust seasoning to taste (add more vinegar for tang or more mayo for creaminess).
  7. Spoon the yolk mixture into a piping bag or zip-top bag. Snip off the corner (about 1/2 inch wide) and pipe the filling into each egg white half, piling it up generously.
  8. Sprinkle crumbled bacon evenly over the filled eggs. Finish with a light dusting of smoked paprika and a sprinkle of fresh chives. Serve immediately, or cover and refrigerate for up to 24 hours (add bacon and chives just before serving for best texture).

Notes

For best results, use eggs that are at least a week old for easier peeling. Cook bacon low and slow for maximum crispiness. If making ahead, store peeled eggs and filling separately, and add bacon and chives just before serving to keep toppings crunchy. The filling can be adjusted with extra vinegar or mayo to taste.
