  • 1/2 cup (115g) unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated zucchini (about 1 medium zucchini), squeezed dry
  • 1/2 cup (90g) semi-sweet chocolate chips (optional)
  • For the Cream Cheese Frosting:
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (57g) unsalted butter, softened
  • 1 1/2 cups (180g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper.
  2. Grate zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a large bowl, sift together flour, cocoa powder, baking powder, and salt.
  4. In a separate bowl, whisk granulated sugar, brown sugar, and melted butter until smooth. Add eggs one at a time, beating well after each. Stir in vanilla extract.
  5. Fold grated zucchini into the wet mixture until evenly distributed.
  6. Slowly add dry ingredients to wet ingredients, folding gently until just combined.
  7. Fold in chocolate chips if using.
  8. Pour batter into prepared pan and smooth the top with a spatula.
  9. Bake for 30-35 minutes, checking doneness with a toothpick (should come out with a few moist crumbs).
  10. Cool brownies completely in the pan on a wire rack for at least 30 minutes.
  11. Make frosting by beating cream cheese and butter until fluffy. Gradually add powdered sugar and vanilla extract, mixing until smooth. Add a pinch of salt.
  12. Spread frosting evenly over cooled brownies.
  13. Refrigerate for 1-2 hours before slicing for best results.

Notes

Squeeze zucchini thoroughly to avoid soggy brownies. Do not overmix batter to keep brownies fudgy. If frosting is too soft, chill for 15 minutes before spreading. Refrigerate brownies after frosting for best texture.
