  • 1 tsp vanilla extract
  • 1 medium zucchini (about 1 cup shredded, squeezed dry)
  • ¾ cup (130 g) semi-sweet chocolate chips

  • Optional: ½ tsp espresso powder

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch (23×23 cm) baking pan with parchment paper, leaving some overhang for easy removal.
  2. Shred 1 medium zucchini (about 1 cup / 120 g) using a fine grater. Place shredded zucchini in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a large bowl, sift together 1 cup (125 g) all-purpose flour, ½ cup (50 g) unsweetened cocoa powder, 1 tsp baking powder, ½ tsp salt, and ½ tsp espresso powder if using. Whisk to combine and aerate, about 2 minutes.
  4. In another bowl, beat ¾ cup (150 g) granulated sugar and ⅓ cup (80 ml) vegetable oil with 2 large eggs until smooth and slightly fluffy, about 3 minutes. Stir in 1 tsp vanilla extract.
  5. Fold the shredded zucchini gently into the wet mixture until evenly distributed.
  6. Slowly add the dry ingredients to the wet ingredients, folding gently with a spatula until just combined. Avoid overmixing.
  7. Fold in ½ cup (85 g) semi-sweet chocolate chips into the batter. Pour batter into prepared pan and sprinkle remaining ¼ cup (45 g) chocolate chips evenly on top.
  8. Bake for 25-30 minutes. Check at 25 minutes by inserting a toothpick in the center; it should come out with a few moist crumbs but not wet batter.
  9. Remove from oven and cool in the pan on a wire rack for at least 20 minutes before lifting out and slicing.

Drain zucchini well to avoid soggy brownies. Do not overmix batter to keep brownies fudgy. Use room temperature eggs for better texture. Cooling completely before slicing is crucial for moist center.
