  • 1 small honeycomb piece (about 3 oz / 85 g)
  • Fresh seasonal fruits (about 2 cups total) such as ripe figs, juicy grapes, sliced peaches, or berries
  • A handful of mixed nuts (about 1/2 cup) such as toasted almonds, walnuts, or pistachios
  • Crunchy crackers and/or sliced baguette
  • Fresh herbs like mint or thyme for garnish (optional)

Instructions

  1. Prepare the whipped feta: In a medium mixing bowl, add the crumbled feta and softened cream cheese. Pour in 2 tablespoons of extra virgin olive oil and the fresh lemon juice. Using an electric mixer on medium speed, whip the mixture for about 3-4 minutes until it is incredibly smooth and creamy. If you don’t have a mixer, mash with a fork and whisk vigorously for about 7-8 minutes until silky and spreadable.
  2. Season the whipped feta: Add freshly ground black pepper to taste and gently mix with a spatula. Adjust lemon juice if desired.
  3. Prep the fruits and nuts: Wash and dry your chosen fruits. Slice peaches or figs into thin wedges, leave grapes whole, and arrange berries in small clusters. Toast the nuts lightly in a dry skillet over medium heat for 3-4 minutes until fragrant.
  4. Assemble the board: Spread the whipped feta generously onto the center of your serving board or plate, creating a thick, rustic layer or dollops. Place the honeycomb in a small bowl or on a corner of the board. Arrange the fresh fruit and toasted nuts artfully around the cheese. Fill in the spaces with crunchy crackers or baguette slices.
  5. Garnish and serve: Scatter fresh herbs like mint or thyme on top for a pop of green and fresh aroma. Serve immediately at room temperature. If needed, cover and refrigerate for up to 2 hours before serving—bring back to room temperature before enjoying.
