These Fresh Rainbow Veggie Pinwheel Sandwiches are a quick, easy, and healthy snack featuring colorful veggies wrapped in a soft tortilla with creamy hummus. Perfect for picnics, lunchboxes, or casual gatherings.

  • 1 large flour tortilla wrap
  • 1/2 cup hummus (classic or roasted red pepper)
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 orange bell pepper, thinly sliced
  • 1/2 cup shredded carrots
  • 1 cup fresh spinach leaves, washed and dried
  • 1/2 cucumber, thinly sliced (English cucumber preferred)
  • 2 green onions, finely chopped
  • A few sprigs of fresh parsley or cilantro (optional)
  • 1 teaspoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and dry all fresh ingredients. Slice bell peppers into thin strips about 1/8 inch wide. Shred carrots finely. Slice cucumber thinly, removing seeds if preferred. Chop green onions and herbs finely.
  2. In a small bowl, toss the chopped herbs with lemon juice, salt, and pepper. Set aside.
  3. Place one large tortilla flat on a clean surface or cutting board. Using a spreading knife, evenly coat the tortilla with about 2 tablespoons of hummus, leaving roughly a 1/2-inch border around the edges.
  4. Layer spinach leaves over the hummus, followed by bell pepper strips arranged lengthwise in a colorful pattern. Add shredded carrots and cucumber slices evenly on top. Sprinkle the lemon-herb mixture and chopped green onions over the veggies.
  5. Starting from one edge, carefully roll the tortilla tightly but without squeezing too hard to avoid tearing. The hummus acts as glue to hold everything together.
  6. Tightly wrap the rolled tortilla in plastic wrap or parchment paper. Chill in the fridge for at least 15 minutes to help set the shape and make slicing easier.
  7. Remove from the fridge and unwrap. Using a sharp knife, slice the roll crosswise into 1-inch thick pinwheels. Arrange on a serving platter with the spiral pattern showing.

Notes

If the tortilla is dry and cracking while rolling, warm it in the microwave for 10 seconds to make it more pliable. Avoid overstuffing the wrap to prevent bursting when slicing. Chill the rolled tortilla before slicing for clean cuts. Use a serrated or very sharp knife for best results.
