  • 56 medium fresh peaches, peeled and sliced
  • 3/4 cup granulated sugar (150 g) for peaches
  • 1/4 cup granulated sugar (50 g) for biscuit topping
  • 1 cup all-purpose flour (120 g)
  • 1 1/2 teaspoons baking powder
  • Pinch of salt
  • 1/2 cup unsalted butter (115 g), cold and cut into small pieces
  • 1/2 cup whole milk (120 ml), room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • 1 tablespoon freshly squeezed lemon juice
  • Vanilla ice cream for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel, pit, and slice 5-6 medium peaches. Place them in a large mixing bowl.
  3. Add 3/4 cup granulated sugar, 1 tablespoon lemon juice, and 1/2 teaspoon cinnamon (if using) to the peaches. Gently toss to coat and let sit for about 10 minutes.
  4. In a separate bowl, mix 1 cup all-purpose flour, 1/4 cup sugar, 1 1/2 teaspoons baking powder, and a pinch of salt.
  5. Cut in the cold, cubed butter using a pastry cutter or two knives until the mixture resembles coarse crumbs.
  6. Stir in 1/2 cup whole milk and 1 teaspoon vanilla extract gently just until combined; do not overmix.
  7. Transfer the peach mixture to a 9×9-inch baking dish, spreading evenly along with any juices.
  8. Drop spoonfuls of the biscuit batter over the peaches, leaving some gaps.
  9. Bake for 35-40 minutes until the topping is golden brown and a toothpick inserted into the biscuit topping comes out clean.
  10. Remove from oven and let cool for 10-15 minutes.
  11. Serve warm with generous scoops of vanilla ice cream.

Notes

Keep butter cold for a flaky topping. Don’t overmix the batter to avoid a dense topping. If topping browns too quickly, cover loosely with foil halfway through baking. Let cobbler cool slightly before serving to thicken juices. For gluten-free, substitute flour with gluten-free blend. For vegan, use coconut oil and plant-based milk and ice cream.
