  • 3 medium ripe fresh peaches, sliced
  • 8 ounces creamy burrata cheese
  • A handful of fresh basil leaves, torn or whole
  • 2 tablespoons extra virgin olive oil
  • 12 tablespoons balsamic glaze
  • Pinch of flaky sea salt
  • Freshly ground black pepper, to taste

Instructions

  1. Rinse the peaches under cool water and pat dry. Slice into thin wedges about 1/4 inch thick.
  2. Arrange the peach slices evenly on a serving platter, slightly overlapping.
  3. Gently tear the burrata into chunks and scatter over the peaches.
  4. Scatter fresh basil leaves over the salad.
  5. Drizzle 2 tablespoons of extra virgin olive oil evenly over the salad, then add 1-2 tablespoons of balsamic glaze in a light zigzag pattern.
  6. Sprinkle flaky sea salt and freshly ground black pepper over the top.
  7. Serve immediately or chill uncovered in the fridge for up to 30 minutes if desired.

Notes

Let burrata sit at room temperature for 10 minutes before assembling for creamier texture. Assemble just before serving to keep peaches fresh and prevent sogginess. Use ripe but firm peaches for best texture. Substitute fresh mozzarella if burrata is unavailable, or marinated tofu for a dairy-free option. Balsamic glaze can be homemade by reducing balsamic vinegar.
