Fresh Homemade Strawberry Fruit Leather

A quick and easy 3-ingredient snack recipe that transforms fresh strawberries into a chewy, natural fruit leather perfect for on-the-go treats.

  • 4 cups fresh strawberries, hulled and halved
  • 2 tablespoons fresh lemon juice
  • 23 tablespoons honey or granulated sugar

Instructions

  1. Wash and hull about 4 cups (around 600 grams) of fresh strawberries. Remove stems and cut into halves or quarters for easier blending.
  2. Place strawberries in a blender or food processor. Add 2 tablespoons (30 ml) fresh lemon juice and 2 to 3 tablespoons (30-45 grams) honey or sugar. Blend until smooth, about 1 minute, scraping down sides as needed.
  3. Taste the puree and adjust sweetness by adding more honey or sugar if desired. Optionally add a pinch of salt to balance flavors.
  4. Line a rimmed baking sheet (approximately 18×13 inches) with a silicone baking mat or parchment paper. Pour the strawberry puree onto the sheet and spread evenly to about 1/8 inch (3 mm) thickness using a spatula.
  5. Preheat oven to the lowest setting (140-170°F). Place the baking sheet in the oven with the door slightly ajar to allow moisture to escape. Dry for 4-6 hours, checking periodically until the fruit leather is no longer sticky and peels away easily. Alternatively, use a food dehydrator set to 135°F and dry for 6-8 hours.
  6. Let the dried fruit leather cool completely on the baking sheet. Peel off carefully and cut into strips or shapes using a sharp knife or kitchen scissors.
  7. Store in an airtight container at room temperature for up to 2 weeks, refrigerate for longer freshness, or freeze for extended storage.

Notes

Keep oven door slightly ajar during drying to allow moisture to escape. Use ripe but firm strawberries for best results. Spread puree evenly and thinly (about 1/8 inch) for even drying. If fruit leather tears when peeling, dry longer. For vegan version, substitute honey with maple syrup. Store in airtight container; refrigerate or freeze for longer shelf life.
