  • 1 cup (150 g) fresh strawberries, hulled and sliced
  • 2 tablespoons (8 g) fresh herbs (rosemary, thyme, basil), finely chopped
  • 2 tablespoons (42 g) raw or wildflower honey
  • Flaky or coarse sea salt, to taste
  • Fresh ground black pepper, optional
  • Crusty bread or crackers, for serving (sourdough or baguette slices recommended)

Instructions

  1. Soften the butter by leaving it out at room temperature for about 30 minutes until soft but not melted.
  2. Rinse and pat dry fresh rosemary, thyme, and basil leaves. Remove tough stems and finely chop to make about 2 tablespoons of mixed herbs.
  3. Hull and slice fresh strawberries into thin pieces and set aside.
  4. In a mixing bowl, combine the softened butter with the chopped herbs. Blend evenly using a fork or spatula. Add a pinch of flaky sea salt and freshly ground black pepper if desired.
  5. Spread the herb butter thickly and evenly across your serving board or platter.
  6. Arrange the sliced strawberries artfully on top and around the butter.
  7. Generously drizzle raw honey over the strawberries and butter.
  8. Sprinkle a little extra flaky sea salt over everything to balance the sweetness. Garnish with whole herb sprigs if desired.
  9. Serve alongside crusty bread or your favorite crackers.

Notes

Use softened butter, not melted, for best texture. Assemble the board just before serving for freshness. For a vegan version, substitute vegan butter and maple syrup for honey. Keep strawberries fresh and dry until assembly to avoid sogginess. A quick 5-7 second microwave softening can help if butter is too firm.
