  • 2 cups heirloom tomatoes, diced
  • 8 ounces creamy burrata cheese
  • Fresh basil leaves, roughly chopped or torn
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 1 large garlic clove, peeled and halved
  • 1 small loaf French baguette or rustic Italian bread, sliced 1/2-inch thick
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Dice about 2 cups of heirloom tomatoes into bite-sized pieces and place in a mixing bowl.
  2. Add 2 tablespoons of extra virgin olive oil, 1 teaspoon of balsamic vinegar, a pinch of sea salt, and freshly ground black pepper to the tomatoes. Toss gently to coat.
  3. Stir in a handful of torn fresh basil leaves and let the mixture sit while preparing the bread.
  4. Slice the baguette or rustic bread into 1/2-inch thick pieces and arrange them in a single layer on a baking sheet or grill pan.
  5. Toast the bread under the oven broiler or on medium heat on the stove for about 2-3 minutes per side until golden and crispy, watching carefully to avoid burning.
  6. Rub the cut side of a halved garlic clove over each toasted bread slice for a subtle garlicky flavor.
  7. Place a spoonful of the tomato mixture on each toast slice.
  8. Top each with a generous piece of creamy burrata cheese.
  9. Drizzle a little more olive oil over the top and garnish with a small basil leaf.
  10. Taste and adjust seasoning with extra sea salt or pepper if needed.
  11. Serve immediately to enjoy the contrast between warm, crunchy bread and cool, creamy burrata.

If tomatoes seem watery, drain them before assembling to prevent soggy bread. Rub garlic on warm toast for best flavor. Handle burrata gently and add just before serving. Prepare tomato mixture ahead but toast bread and add cheese fresh. For dairy-free, substitute burrata with cashew cheese spread. Grilling bread or tomatoes adds smoky flavor.
