  • 3 medium Kirby or English cucumbers, thinly sliced
  • 1 cup (240 ml) full-fat Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • Zest of 1 medium lemon
  • 1 tablespoon freshly squeezed lemon juice
  • 1 small clove garlic, minced (optional)
  • ½ teaspoon kosher salt, plus more to taste
  • ¼ teaspoon freshly ground black pepper, to taste
  • 1 teaspoon olive oil (optional)

Instructions

  1. Wash and dry the cucumbers thoroughly. Using a sharp knife or mandoline, slice them into thin rounds, about 1/8 inch (3 mm) thick. If you have a salad spinner, spin them dry or pat with paper towels to remove excess moisture.
  2. In a large mixing bowl, combine the Greek yogurt, freshly squeezed lemon juice, lemon zest, minced garlic (if using), salt, and black pepper. Whisk together until smooth and slightly fluffy.
  3. Toss the sliced cucumbers into the bowl with the yogurt dressing. Use a spatula or spoon to gently fold the cucumbers so they’re evenly coated without bruising.
  4. Sprinkle in the chopped dill and lightly fold again to distribute it through the salad.
  5. Taste the salad and add more salt, pepper, or lemon juice if needed.
  6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld and the salad chill.
  7. Just before serving, drizzle the optional teaspoon of olive oil over the salad and give it a gentle toss.

Dry cucumbers well to avoid watery salad. Use fresh dill for best flavor. Chilling the salad for at least 30 minutes enhances flavor melding. Optional olive oil adds richness before serving. For dairy-free, substitute Greek yogurt with coconut or almond milk yogurt. Salt cucumbers and drain if watery.
