Ingredients

Scale
  • 1 large head of broccoli, cut into small florets
  • 1 large head of cauliflower, cut into small florets
  • 1 bunch of cherry tomatoes, preferably mixed colors
  • 2 large red bell peppers, sliced into thin strips
  • 1 bunch of fresh rosemary sprigs, about 8–10 long stems
  • 1 bunch of fresh parsley, flat-leaf preferred
  • 1 English cucumber, sliced into rounds
  • 1 cup of snow peas or sugar snap peas, trimmed
  • Optional: small radishes, cut into thin rounds
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper, freshly ground
  • 1/2 teaspoon salt, or to taste
  • 1 tablespoon lemon juice, freshly squeezed

Instructions

  1. Prepare the dip first: In a small mixing bowl, combine sour cream, mayonnaise, fresh parsley, fresh dill, fresh chives, garlic powder, onion powder, dried thyme, black pepper, salt, and lemon juice. Stir until well combined. Taste and adjust seasoning if needed. Cover and refrigerate while prepping vegetables.
  2. Wash and dry all vegetables thoroughly. Pat every piece completely dry with paper towels to prevent the wreath from sliding and the dip from becoming watery.
  3. Cut vegetables: Cut broccoli and cauliflower into small, uniform florets (about 1 to 1.5 inches). Cut bell peppers into thin strips (about 2 inches long and 1/4 inch wide). Slice cucumber into rounds (about 1/4 inch thick). Leave cherry tomatoes whole. Trim ends off snow peas. If using radishes, slice into thin rounds.
  4. Arrange the rosemary base: Place large platter on counter. Arrange rosemary sprigs in a circle on the platter, creating a ring about 10 inches in diameter. Stems should point outward, leafy ends overlapping slightly.
  5. Place the dip bowl in the center of the rosemary ring. Ensure it is stable and centered.
  6. Build the first layer of vegetables: Place broccoli florets around the dip bowl, working outward in a circular pattern. Nestle florets into the rosemary with cut sides down and florets pointing outward. Use about half of the broccoli.
  7. Add the cauliflower layer: Place cauliflower florets in between and around the broccoli, following the same circular pattern. Alternate between broccoli and cauliflower. Leave some space for other vegetables.
  8. Fill in with remaining vegetables: Tuck cucumber rounds between florets, overlapping slightly. Place cherry tomatoes in small clusters around the wreath. Arrange bell pepper strips in a ribbon-like pattern. Tuck snow peas in at angles, pointing outward. Scatter radishes if using.
  9. Add fresh parsley: Take small sprigs of fresh parsley and tuck into any gaps in the wreath to fill empty spaces and add texture.
  10. Fill the dip bowl and garnish: Spoon prepared herb dip into the center ramekin. Smooth the top. Sprinkle a few chopped chives or a small sprig of dill on top.
  11. Final adjustments: Step back and look at the wreath from all angles. Fill any bare spots with more parsley or cherry tomatoes. Adjust dip bowl if needed.

Notes

For best results, use fresh herbs in the dip. Dried herbs can be substituted but reduce quantity by half. Make dip a day ahead for better flavor. Keep vegetables cold and dry for optimal arrangement. If transporting, assemble on a rimmed platter and cover loosely with plastic wrap.
