Ingredients

  • Cherry tomatoes, halved or whole depending on size

  • Small wooden toothpicks or mini skewers
  • Whole grain crackers or pita chips
  • Sliced cucumber (fresh and crisp, peeled if preferred)
  • Baby carrots or carrot sticks
  • Hummus or ranch dip
  • Apple slices or seasonal fruit (e.g., Gala or Fuji apples)
  • Hard-boiled egg halves

Instructions

  1. Wash cherry tomatoes and basil leaves thoroughly.
  2. Drain the mini mozzarella balls on paper towels to remove excess moisture.
  3. Thread one cherry tomato, one basil leaf (folded if large), and one mozzarella ball onto each toothpick.
  4. Place skewers on a plate and drizzle lightly with extra virgin olive oil.
  5. Sprinkle with a pinch of salt and freshly ground black pepper. Set aside.
  6. Slice cucumbers into thin rounds or sticks, depending on preference.
  7. Peel and cut baby carrots if needed.
  8. Slice apples thinly; toss with a little lemon juice to prevent browning if packing ahead.
  9. If not pre-cooked, place eggs in a saucepan and cover with cold water by 1 inch.
  10. Bring to a rolling boil over medium-high heat.
  11. Turn off heat, cover, and let eggs sit for 10-12 minutes.
  12. Transfer eggs to ice water to cool, then peel and halve.
  13. Place mini Caprese skewers in one compartment of the bento box.
  14. Arrange crackers or pita chips in another compartment, keeping them separate from the dip.
  15. Fill one compartment with cucumber slices.
  16. Fill another compartment with baby carrots alongside the hummus or ranch dip.
  17. Place apple slices in the last compartment with the hard-boiled egg halves.
  18. Close the bento box securely to prevent spills.
  19. If packing ahead, keep the box refrigerated and pack ice packs if needed.

Notes

Prepare hard-boiled eggs in advance to save time. Keep crackers separate from dips to avoid sogginess. Use fresh basil for best flavor; baby spinach or mint can be alternatives.
