  • Pinch of salt

  • Crisp cucumber ribbons
  • Fresh basil leaves or baby spinach
  • Thinly sliced turkey or smoked salmon
  • Light spread of Dijon mustard or hummus

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the egg whites from the yolks, placing the whites in a large clean bowl.
  3. Add 1/4 teaspoon cream of tartar to the egg whites and whip with an electric mixer on medium-high speed until stiff peaks form (about 5-7 minutes).
  4. In another bowl, beat together the egg yolks, softened cream cheese, salt, and any optional herbs or spices until smooth and creamy.
  5. Gently fold one-third of the whipped egg whites into the yolk mixture to lighten it, then carefully fold in the rest without deflating the whites.
  6. Spoon the batter onto the parchment-lined baking sheet in 6-8 even rounds, about 3-4 inches in diameter.
  7. Bake for 25-30 minutes until golden on top and set but still soft to the touch. Avoid opening the oven door during baking.
  8. Remove from oven and cool completely on a rack to avoid sogginess.
  9. Assemble sandwiches by layering fresh fillings between two cloud bread rounds and serve immediately or wrap for later.

Notes

Use room temperature eggs for better volume. Clean bowls and beaters thoroughly to avoid grease which prevents egg whites from whipping properly. Fold egg whites gently to keep batter airy. Avoid opening oven door during baking to maintain steady heat. Cool bread completely before assembling sandwiches to prevent sogginess. Reheat gently in a low oven if needed. Cream of tartar is important for stabilizing egg whites; lemon juice or white vinegar can be used as substitutes.
