  • 1 large egg, room temperature
  • 3 tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon pure vanilla extract (optional)
  • 1 cup (240ml) pure maple syrup
  • 2 tablespoons bourbon
  • 1 teaspoon unsalted butter
  • A pinch of ground cinnamon or nutmeg (optional)

Instructions

  1. In a large bowl, whisk together 1 ½ cups all-purpose flour, 2 tablespoons sugar, 1 teaspoon baking powder, ½ teaspoon baking soda, and ½ teaspoon salt.
  2. In a separate bowl, whisk 1 ¼ cups buttermilk, 1 large room-temperature egg, 3 tablespoons melted butter, and 1 teaspoon vanilla extract.
  3. Pour the wet ingredients into the dry, folding gently with a spatula. Do not overmix; some lumps are okay.
  4. Let the batter rest for 5-10 minutes to activate the baking powder and soda.
  5. Preheat skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Using a ¼ cup ladle, pour batter onto the pan. Cook for 2-3 minutes until bubbles form and edges look set. Flip and cook for another 1-2 minutes until golden brown.
  7. Keep cooked pancakes warm in a 200°F (93°C) oven while finishing the rest.
  8. In a small saucepan over low heat, combine 1 cup maple syrup, 2 tablespoons bourbon, 1 teaspoon butter, and a pinch of cinnamon or nutmeg. Warm gently until butter melts and syrup is hot but not boiling.
  9. Serve pancakes stacked, drizzled generously with bourbon maple syrup, and enjoy immediately.

Notes

Do not overmix the batter to keep pancakes fluffy; some lumps are fine. Let the batter rest to activate leavening agents. Cook syrup on low heat to avoid bitterness and preserve bourbon flavor. If batter thickens too much, stir in a tablespoon of buttermilk. The first pancake is a test pancake and may not be perfect.
