A quick and easy grilled salmon recipe featuring a smoky, sweet, and spicy maple chipotle glaze that caramelizes perfectly on the grill for a delicious crust.

Ingredients

Scale
  • 4 skin-on wild-caught salmon fillets (6 oz / 170 g each)
  • 1/3 cup (80 ml) pure maple syrup
  • 1 tablespoon (7 g) chipotle powder
  • 1 teaspoon (2.5 g) garlic powder
  • 1/2 teaspoon (1 g) ground cumin
  • 1 teaspoon (5 g) kosher or sea salt
  • 1/2 teaspoon (1 g) freshly ground black pepper
  • 1 tablespoon (15 ml) freshly squeezed lemon juice
  • 1 tablespoon (15 ml) olive oil

Instructions

  1. Preheat your grill to medium-high heat, about 375°F (190°C). Clean and oil the grates to prevent sticking.
  2. In a mixing bowl, combine maple syrup, chipotle powder, garlic powder, ground cumin, salt, and black pepper. Stir well until fully blended.
  3. Pat salmon fillets dry with paper towels to help the glaze stick better and promote even caramelization.
  4. Brush a generous layer of the maple chipotle glaze on both sides of the salmon fillets. Reserve some glaze for basting during cooking.
  5. Place salmon skin-side down on the grill. Grill for 5-6 minutes without moving it to develop a nice crust.
  6. Carefully flip the salmon using a fish spatula. Brush the top side with more glaze and grill for another 4-5 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 125°F (52°C) for medium doneness.
  7. Transfer salmon to a serving plate. Squeeze fresh lemon juice over the top and let rest for 3-5 minutes before serving.

Notes

Avoid flipping the salmon too early or too often to allow the glaze to set and develop a sticky crust. If flare-ups occur, move the salmon to a cooler part of the grill. Pat salmon dry before glazing for best caramelization. Rest salmon after grilling to redistribute juices.
