Quick and easy grilled chicken wings coated in a sticky, tangy honey lime glaze with a hint of garlic and chili flakes. Perfect for summer BBQs and last-minute gatherings.

  • 2 pounds chicken wings, tips removed and separated into drumettes and flats
  • 1/4 cup honey (85g), preferably raw or organic
  • Juice of 2 large limes (about 1/4 cup or 60ml), freshly squeezed
  • Zest from 1 lime
  • 3 cloves garlic, minced finely
  • 1/2 teaspoon chili flakes (optional)
  • 2 tablespoons olive oil (30ml)
  • Salt and pepper to taste
  • A handful fresh cilantro or parsley, chopped for garnish

Instructions

  1. Rinse and pat dry 2 pounds (900g) of chicken wings to remove excess moisture for crispier skin. This takes about 5 minutes.
  2. In a small bowl, whisk together 1/4 cup honey, juice of 2 limes (about 1/4 cup/60ml), zest from 1 lime, 3 minced garlic cloves, 1/2 teaspoon chili flakes, and 2 tablespoons olive oil. Add salt and pepper to taste. This takes around 5 minutes.
  3. Place wings in a large bowl. Pour half of the glaze over them and toss well to coat all pieces. Let marinate for 15-20 minutes at room temperature. Reserve the remaining glaze for basting.
  4. Preheat grill to medium-high heat (about 375°F/190°C). If using charcoal, wait until coals are covered in white ash. Lightly oil grill grates to prevent sticking.
  5. Arrange wings on the grill in a single layer. Cook for 20-25 minutes total, turning every 5 minutes. At each turn, brush wings with reserved glaze to build sticky layers. Wings are done when juices run clear and internal temperature reaches 165°F (74°C).
  6. Transfer wings to a plate or serving bowl and let rest for 5 minutes. Sprinkle chopped fresh cilantro or parsley on top before serving.

Notes

Pat wings dry before marinating for crispier skin. Marinate wings for 15-20 minutes to avoid meat becoming mushy. Watch for flare-ups due to honey sugars and move wings if flames spike. Use a meat thermometer to ensure wings reach 165°F (74°C). Baste frequently for sticky, flavorful coating. If no grill is available, bake wings at 425°F (220°C) for 35-40 minutes, flipping and basting halfway through.
