A simple and delicious honey fig jam infused with vanilla bean, perfect for spreading on toast or gifting. This easy homemade jam combines fresh figs, honey, and vanilla for a rich, aromatic flavor.

  • 2 pounds fresh figs, ripe but firm
  • 1/2 cup honey (raw wildflower recommended)
  • 1 whole vanilla bean, split and scraped
  • 2 tablespoons fresh lemon juice
  • 1/4 cup water
  • Pinch of sea salt (optional)

Instructions

  1. Rinse the figs gently and remove stems. Chop into quarters. (10 minutes)
  2. Split the vanilla bean lengthwise and scrape out the seeds. Set seeds and pod aside. (5 minutes)
  3. In a heavy-bottomed saucepan, combine chopped figs, honey, lemon juice, water, vanilla seeds, and the empty vanilla pod. Stir gently. (5 minutes)
  4. Bring mixture to a gentle boil over medium heat, stirring frequently. Reduce heat to low and simmer uncovered for 35-40 minutes, stirring every few minutes until thickened but still chunky. (35-40 minutes)
  5. Test for set by placing a spoonful of jam on a cold plate; chill for a minute and push with finger. If it wrinkles and holds shape, jam is ready. If not, simmer longer and test again. (5 minutes)
  6. Remove and discard the vanilla pod.
  7. Ladle hot jam into sterilized glass jars, leaving 1/4 inch headspace. Seal immediately. (10 minutes)
  8. Let jars cool at room temperature before storing in the refrigerator or a cool dark place.

Notes

Stir gently and frequently to prevent burning. Use the wrinkle test on a cold plate to check jam set. Remove vanilla pod before jarring to avoid bitterness. For vegan version, substitute honey with maple syrup or agave nectar. Jam can be made in a slow cooker on low for 3-4 hours. Store in refrigerator up to 3 weeks or freeze up to 6 months.
