A quick and easy summer BBQ side dish featuring grilled corn on the cob slathered with smoky, tangy chipotle lime butter that seeps into every kernel for irresistible flavor.

Ingredients

Scale
  • 6 ears fresh corn on the cob, husks removed
  • 1/2 cup (115g) unsalted butter, softened
  • 1 to 1 1/2 teaspoons chipotle powder
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon garlic powder
  • Salt to taste (about 1/2 teaspoon)
  • 1/4 teaspoon freshly ground black pepper
  • Optional: 2 tablespoons chopped fresh cilantro

Instructions

  1. Preheat your grill to medium-high heat, about 375°F (190°C).
  2. In a mixing bowl, combine softened unsalted butter, chipotle powder, fresh lime juice, garlic powder, salt, and black pepper. Whisk until smooth and creamy. Stir in chopped cilantro if using.
  3. Clean and husk the corn, removing outer husks and silk, then pat dry with a paper towel.
  4. Place the ears directly on the grill grates. Close the lid and cook for about 10-12 minutes, turning every 2-3 minutes to get an even char.
  5. Remove the corn from the grill and immediately brush generously with the chipotle lime butter while still hot.
  6. Serve the grilled corn warm for best flavor.

Notes

Do not soak the corn before grilling to avoid steaming. Turn corn every 2-3 minutes for even cooking. Use softened butter for easy spreading. If corn chars too quickly, move to a cooler part of the grill or lower the heat. Leftover corn can be reheated gently on the grill or skillet.
