A quick and easy hot dog recipe featuring smoky grilled hot dogs topped with a creamy, spicy mayo and fresh toppings for a flavorful, crowd-pleasing meal.

Ingredients

Scale
  • 8 all-beef hot dogs
  • 8 hot dog buns (soft but sturdy, brioche recommended)
  • 1 tablespoon vegetable oil or butter (for toasting buns)
  • ½ cup mayonnaise
  • 12 tablespoons Sriracha sauce
  • 1 teaspoon lime juice (freshly squeezed)
  • ½ teaspoon smoked paprika
  • Pinch of salt
  • 1 cup shredded sharp cheddar cheese (optional)
  • ½ cup finely chopped red onion
  • ½ cup diced fresh tomatoes
  • 2 tablespoons chopped fresh cilantro or parsley
  • Pickled jalapeños or fresh sliced jalapeños (optional)

Instructions

  1. Make the Spicy Mayo Sauce: In a small bowl, combine ½ cup mayonnaise, 1-2 tablespoons Sriracha, 1 teaspoon fresh lime juice, ½ teaspoon smoked paprika, and a pinch of salt. Whisk until smooth and creamy. Adjust heat as desired. Refrigerate while preparing the rest. (About 5 minutes)
  2. Prep the Toppings: Finely chop the red onion, dice the tomatoes, and roughly chop the cilantro or parsley. Slice jalapeños if using. Keep ready in small bowls. (10 minutes)
  3. Cook the Hot Dogs: Heat grill pan or skillet over medium-high heat. Cook hot dogs for 5-7 minutes, turning occasionally, until browned and slightly charred. (7 minutes)
  4. Toast the Buns: Brush insides of buns with vegetable oil or butter. Place cut-side down on grill pan for 1-2 minutes until golden and crispy. Watch closely to avoid burning. (2-3 minutes)
  5. Assemble the Firecracker Hot Dogs: Spread spicy mayo inside each toasted bun. Place hot dog on top, sprinkle with cheddar cheese while warm to melt slightly, then add onions, tomatoes, herbs, and jalapeños if using. Press gently to combine. (5 minutes)
  6. Serve Immediately: Enjoy hot dogs fresh and hot. Serve extra spicy mayo on the side for dipping or drizzling.

Notes

Toast buns lightly with oil or butter for best texture. Adjust Sriracha to control spice level. Use plant-based hot dogs and vegan mayo for vegetarian/vegan options. Leftovers keep well refrigerated for 2 days; reheat in oven for best texture.
