Instructions

  1. In a large bowl, whisk together 1 1/4 cups all-purpose flour and 1/2 teaspoon sea salt. Add cold, cubed butter and work it into the flour using a pastry cutter or fingers until mixture resembles coarse crumbs with some pea-sized bits.
  2. Sprinkle 3 tablespoons ice water over the mixture and gently mix until dough starts to come together. Add remaining tablespoon if needed. Wrap dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Combine 2 cups fresh blueberries, 2 tablespoons raw honey, 1 tablespoon balsamic vinegar, 1/2 teaspoon freshly ground black pepper, 1 tablespoon cornstarch, and 1 tablespoon sugar (if using) in a bowl. Toss gently to coat.
  4. Roll chilled dough on a lightly floured surface into a 12-inch circle about 1/8 inch thick. Transfer to a parchment-lined baking sheet.
  5. Spoon blueberry filling into the center, leaving a 2-inch border. Fold edges of dough over filling, pleating gently, leaving center open.
  6. Brush dough edges with beaten egg. Bake at 375°F (190°C) for 35-40 minutes until crust is golden and filling bubbles. Cover edges with foil if browning too quickly.
  7. Cool galette for 10-15 minutes. Drizzle with raw honey before serving. Serve warm or at room temperature.
