  • Blueberries, rinsed (1 cup)
  • Raspberries (½ cup)
  • Banana slices (1 medium banana)
  • Honey or maple syrup (for drizzling)
  • Whipped cream or Greek yogurt (for creaminess)
  • Lemon curd or fruit preserves (optional)
  • Optional extras: chopped nuts (walnuts or pecans), shredded coconut flakes, dark chocolate chips or shaved chocolate

Instructions

  1. Preheat your waffle maker for about 5 minutes until hot.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, beat eggs until frothy. Add buttermilk, melted butter, and vanilla extract; mix gently.
  4. Pour wet ingredients into dry ingredients and stir with a spatula just until combined; batter will be slightly lumpy.
  5. Lightly grease the waffle maker with non-stick spray or melted butter.
  6. Pour about ¾ cup (180 ml) batter onto the center of the hot waffle iron. Close lid and cook for 4-5 minutes until golden brown and crisp.
  7. Place cooked waffles on a wire rack in a warm oven (200°F or 95°C) to keep crisp while finishing the batch.
  8. Wash and slice fresh berries and bananas while waffles cook. Arrange toppings on a board or in small bowls.

Notes

Do not overmix the batter to keep waffles tender. Use room temperature ingredients for even cooking. Keep waffles warm on a wire rack in a warm oven to maintain crispness. If batter is too thick, add a splash more buttermilk; if too thin, add a pinch of flour. For gluten-free option, substitute flour with almond or oat flour.
