Fudgy chocolate brownie bites topped with playful Pop Rocks candy for a fun and surprising dessert experience. Quick and easy to make, perfect for parties or a sweet snack.

  • ½ cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • ¾ cup (95g) all-purpose flour
  • ⅓ cup (35g) unsweetened cocoa powder, sifted
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • 1 small packet (about 10g) Pop Rocks candy (classic strawberry or watermelon flavor recommended)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch (20×20 cm) baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together melted butter and granulated sugar until combined and glossy.
  3. Add eggs one at a time, whisking after each addition. Stir in vanilla extract.
  4. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder.
  5. Gently fold dry ingredients into wet mixture using a spatula until no streaks of flour remain. Do not overmix.
  6. Pour batter into prepared pan and spread evenly. Tap pan gently to remove air bubbles.
  7. Bake for 20-25 minutes. Check at 20 minutes with a toothpick; it should come out with a few moist crumbs.
  8. Remove from oven and place pan on a cooling rack. Let brownies cool completely, about 30 minutes.
  9. Lift brownies out using parchment paper edges and cut into bite-sized squares or shapes.
  10. Just before serving, sprinkle Pop Rocks candy generously over the brownie bites to keep the fizz fresh.

Notes

Use parchment paper for easy removal and cleanup. Add Pop Rocks just before serving to maintain the popping effect. If short on time, chill brownies in fridge for 15 minutes to speed cooling. Avoid refrigerating brownies with Pop Rocks topping as moisture kills the fizz. For gluten-free, substitute almond flour; for dairy-free, use coconut oil or vegan butter.
