Explosively Crunchy Firecracker Popcorn Recipe with Pop Rocks Perfect for Parties

A fun and unique popcorn recipe combining buttery, sweet glaze with popping Pop Rocks candy for an explosively crunchy snack perfect for parties and movie nights.

  • 1/2 cup (90g) popcorn kernels
  • 4 tablespoons (60g) unsalted butter, melted
  • 2 tablespoons (25g) light brown sugar
  • 1 tablespoon (20g) honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup (about 50g) Pop Rocks candy (cherry or watermelon flavor recommended)

Instructions

  1. Heat 2 tablespoons (30g) of unsalted butter in a large heavy-bottomed pot over medium heat. Add 3 popcorn kernels and cover with the lid. Once they pop, add the remaining 1/2 cup (90g) popcorn kernels, cover, and shake the pot gently every 10 seconds to prevent burning. Popcorn should finish popping in about 3-4 minutes. Remove from heat immediately when popping slows to avoid scorched kernels. Discard any unpopped kernels.
  2. In a small saucepan, melt the remaining 2 tablespoons (30g) of butter over low heat. Stir in 2 tablespoons (25g) light brown sugar and 1 tablespoon (20g) honey until fully combined and smooth. Remove from heat and stir in 1 teaspoon vanilla extract and 1/2 teaspoon salt. The glaze should be warm but not boiling.
  3. Transfer the freshly popped popcorn to a large mixing bowl. Pour the warm butter glaze over it and gently toss with a wooden spoon or spatula until evenly coated. Spread the coated popcorn in a single layer over a parchment-lined baking sheet to cool and set for about 10 minutes.
  4. Just before serving, sprinkle 1/2 cup (50g) of Pop Rocks candy evenly over the popcorn. Give it a light toss to distribute the popping candy. Serve immediately to enjoy the full popping effect.

Notes

Add Pop Rocks only right before serving to preserve the popping effect. Let the butter glaze cool slightly before tossing popcorn to avoid melting the Pop Rocks. Store leftover popcorn without Pop Rocks in an airtight container at room temperature for up to 2 days. Use coconut oil and maple syrup for a dairy-free and vegan version.
