  • 4 slices provolone cheese (or cheddar, mozzarella, pepper jack)
  • Optional: shredded lettuce, thinly sliced bell peppers, or spinach leaves

Instructions

  1. Soften the cream cheese: Take the cream cheese out of the fridge about 20 minutes before starting, or microwave in 10-second bursts until soft but not melted.
  2. Mix the ranch seasoning: In a medium bowl, combine the softened cream cheese with the entire packet of ranch seasoning. Stir until completely smooth and uniform.
  3. Prepare your tortillas: Lay tortillas flat on a clean cutting board. If stiff, microwave for 10 seconds to make more pliable.
  4. Spread the cream cheese mixture: Using a butter knife or offset spatula, spread an even layer (about 1/8 inch thick) of the ranch cream cheese across the entire surface of each tortilla, going all the way to the edges.
  5. Layer the turkey: Place 2-3 slices of turkey on each tortilla, overlapping slightly, for complete coverage.
  6. Add the cheese: Lay one slice of provolone on top of the turkey. If adding veggies, sprinkle a thin layer down the center.
  7. Roll it up tight: Starting at one end, roll the tortilla as tightly as possible without tearing, using fingers to tuck and hold the filling. Press down gently to seal.
