Ingredients

Scale
  • 16 ounces cream cheese, softened to room temperature
  • 8 ounces deli turkey (oven-roasted turkey breast), finely chopped (about 2 cups)
  • 3 to 4 green onions, thinly sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, freshly ground
  • 1 teaspoon Worcestershire sauce
  • 1 cup finely chopped pecans, toasted (for coating)
  • Optional coatings: 1/2 cup everything bagel seasoning, 1/2 cup finely chopped fresh parsley mixed with 1/2 cup finely chopped walnuts, or 1/2 cup crispy bacon bits
  • Optional garnishes: extra sliced green onions, honey drizzle, red pepper flakes

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge at least 1 hour before starting. Cut into cubes if in a hurry. It should be room temperature with no resistance when pressed.
  2. Prep add-ins: Chop deli turkey into very small pieces (about 1/4-inch dice). Thinly slice green onions.
  3. Mix the base: In a large mixing bowl, beat softened cream cheese with an electric hand mixer on medium speed until smooth and fluffy, about 2 minutes. Scrape down sides halfway through.
  4. Add seasonings: Add garlic powder, onion powder, salt, pepper, and Worcestershire sauce. Mix on low speed until combined, about 30 seconds. Scrape bowl again.
  5. Fold in turkey and onions: Add chopped turkey and green onions. Use a spatula to fold gently by hand until evenly distributed. Do not use mixer.
  6. Chill mixture: Cover bowl with plastic wrap and refrigerate for at least 30 minutes until firm enough to roll.
  7. Prepare coating: If using nuts, toast in a dry skillet over medium heat for 3-4 minutes until fragrant. Cool completely, then chop finely. Pour coating into a shallow bowl.
  8. Form balls: Using a cookie scoop or spoon, portion about 1 tablespoon of mixture. Roll between palms to form smooth balls. Place on parchment-lined baking sheet. Repeat until all mixture is used (about 24-30 balls).
  9. Roll in coating: Roll each ball gently in coating, pressing lightly so it sticks. Return to baking sheet.
  10. Final chill: Cover baking sheet with plastic wrap and refrigerate for at least 1 hour before serving (can be left overnight).
  11. Serve: Arrange on a serving platter. Garnish with extra green onions, honey drizzle, or red pepper flakes if desired. Serve cold or at room temperature.

Notes

Don’t rush the cream cheese softening—let it sit out for a full hour for best texture. Pat deli turkey dry with paper towels before chopping to remove excess moisture. Taste the mixture before rolling and adjust seasoning. Keep hands cool by running under cold water before rolling to prevent stickiness. These taste even better if made a day ahead. For extra crunch, double-coat with nuts. Store uncoated balls in fridge for up to 3 days or freeze for up to 3 months. Add coating just before serving.
