  • 1 tablespoon Dijon mustard
  • For the Creamy Ranch Dip:
  • 1/2 cup (120 ml) sour cream
  • 1/4 cup (60 ml) mayonnaise
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon dried dill weed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 teaspoon fresh lemon juice

Instructions

  1. Prepare the creamy ranch dip: In a medium mixing bowl, combine 1/2 cup sour cream and 1/4 cup mayonnaise. Add 1 tablespoon finely chopped fresh parsley, 1 teaspoon dried dill weed, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, salt and pepper to taste, and 1 teaspoon fresh lemon juice. Whisk until smooth and well combined. Cover and refrigerate for at least 15 minutes to allow flavors to meld.
  2. Lay out the tortillas: Place one flour tortilla flat on a clean cutting board. Spread about 1 tablespoon mayonnaise evenly over the entire surface, leaving a small border around the edges.
  3. Add mustard: Drizzle or spread 1 teaspoon Dijon mustard evenly over the mayonnaise layer.
  4. Layer the turkey: Arrange thin slices of turkey breast evenly over the tortilla, about 2 oz (56 g) per tortilla.
  5. Add cheese and greens: Sprinkle 1/4 cup (25 g) shredded cheddar cheese over the turkey, then top with a handful of baby spinach leaves.
  6. Roll tightly: Starting from one edge, roll the tortilla tightly but gently to avoid tearing.
  7. Chill and slice: Wrap the rolled tortilla in plastic wrap and refrigerate for at least 10 minutes to firm up.
  8. Slice into pinwheels: Using a sharp knife, slice the roll into 1-inch (2.5 cm) thick pinwheels, about 6-8 per roll.
  9. Arrange and serve: Place the pinwheels on a serving platter with the creamy ranch dip in a small bowl alongside. Garnish with fresh parsley sprigs if desired.

Notes

Warm tortillas in the microwave for 10-15 seconds wrapped in a damp paper towel if stiff to prevent cracking. Chill rolled tortillas before slicing to help them hold shape. Use fresh herbs in the dip for best flavor. Prepare pinwheels ahead and keep refrigerated, slice just before serving.
