These easy turkey and cheese pinwheel lunchbox wraps are a quick, no-cook appetizer or lunch solution. Made with just a few simple ingredients like flour tortillas, cream cheese, deli turkey, and fresh veggies, they are perfect for meal prep, parties, or a satisfying midday meal.

  • 4 large flour tortillas (1012 inch)
  • 8 ounces full-fat cream cheese, softened
  • 1216 slices deli turkey breast
  • 1 cup sharp cheddar cheese, shredded
  • 4 leaves romaine lettuce, washed and dried thoroughly
  • 1 small cucumber, sliced into thin half-moons
  • 1/2 red bell pepper, thinly sliced

Instructions

  1. Wash and dry the romaine lettuce leaves thoroughly. Slice the cucumber and red bell pepper into thin, uniform strips. Set aside.
  2. Soften the cream cheese 10-15 minutes before starting, or microwave in 10-second bursts until spreadable.
  3. Lay the four tortillas flat on a clean surface. If stiff, microwave for 10 seconds to make them pliable.
  4. Spread a thin, even layer of cream cheese over each tortilla, leaving a 1/2-inch border on all sides.
  5. Lay turkey slices over the cream cheese, overlapping slightly. Sprinkle shredded cheddar cheese evenly over the turkey.
  6. Place romaine leaves over the cheese, then top with cucumber and bell pepper strips.
  7. Starting from the long edge closest to you, roll the tortilla up tightly, tucking in the filling. Wrap snugly in plastic wrap, twisting ends like a candy wrapper.
  8. Place wrapped rolls on a baking sheet and refrigerate for at least 30 minutes to firm up.
  9. Unwrap rolls and slice each into 1-inch thick pinwheels using a sharp knife. Wipe knife between cuts for clean edges.
  10. Arrange on a platter and serve immediately, or store in the fridge.

Notes

Ensure all vegetables are completely dry to prevent soggy wraps. Chill the rolls thoroughly before slicing to ensure clean cuts. Do not reheat, as this will melt the cream cheese and make tortillas limp. Can be stored in the refrigerator for up to 3 days or frozen uncut for later use.
