These sugar cookie fudge bars are a quick, easy, and budget-friendly dessert perfect for bake sales, potlucks, or last-minute cravings. A soft, chewy sugar cookie base is topped with a creamy white chocolate fudge layer and rainbow sprinkles.

Ingredients

Scale
  • 1 box (17.5 oz) sugar cookie mix
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups white chocolate chips
  • 1/2 cup sweetened condensed milk
  • 2 tablespoons unsalted butter
  • 1/4 cup rainbow sprinkles (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 9×13-inch baking pan with parchment paper, leaving a little overhang on two sides.
  2. In a medium mixing bowl, combine the sugar cookie mix, melted butter, egg, and vanilla extract. Stir until a soft dough forms.
  3. Transfer the dough to your prepared pan. Using your hands or a spatula, press it into an even layer, about 1/4 inch thick.
  4. Bake the cookie base for 12-15 minutes, or until the edges are lightly golden and the center looks set. The top should be pale.
  5. Remove the pan from the oven and let it cool on a wire rack for about 10 minutes.
  6. While the base cools, combine the white chocolate chips, sweetened condensed milk, and 2 tablespoons of butter in a small saucepan. Heat over low heat, stirring constantly, until melted and smooth (about 5-7 minutes).
  7. Remove the fudge from the heat and immediately stir in the sprinkles.
  8. Pour the fudge mixture over the slightly cooled cookie base. Use a spatula to spread it evenly.
  9. If desired, sprinkle extra sprinkles over the wet fudge and gently press them in.
  10. Place the pan in the refrigerator for at least 1 hour, or until the fudge is firm (2 hours for clean cuts).
  11. Lift the bars out of the pan using the parchment overhang. Place on a cutting board and slice into squares (typically 24 bars).

Notes

Don’t overbake the cookie base; it should be pale and just set. Use low heat for the fudge to prevent graininess. Let the base cool before adding fudge to avoid a soggy bottom. Chill thoroughly before cutting for clean squares. Bars can be stored in the refrigerator for up to 1 week or frozen for up to 3 months.
