This incredibly easy slow cooker salsa chicken requires just two ingredients and makes the most tender, flavorful taco filling. Perfect for hot summer days when you want a delicious meal without heating up the kitchen.

  • 1.5 to 2 pounds boneless, skinless chicken breasts or thighs
  • 1 (16-ounce) jar of your favorite salsa (restaurant-style recommended)
  • 1 teaspoon cumin (optional)
  • 1/2 teaspoon garlic powder (optional)
  • Salt and pepper to taste (optional)
  • Small corn or flour tortillas (for serving)
  • Chopped cilantro (for serving)
  • Diced white onion (for serving)
  • Sliced avocado or guacamole (for serving)
  • Crumbled cotija cheese (for serving)
  • Fresh lime wedges (for serving)
  • Crema or sour cream (for serving)
  • Hot sauce (for serving)

Instructions

  1. Place the chicken in a single layer at the bottom of the slow cooker.
  2. Pour the entire jar of salsa over the chicken. If using, sprinkle cumin and garlic powder on top. Do not stir.
  3. Cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and shreds easily.
  4. Carefully remove the chicken from the slow cooker and shred with two forks. Alternatively, shred directly in the slow cooker.
  5. Return the shredded chicken to the slow cooker and stir into the salsa liquid. Let sit for 10-15 minutes to absorb flavors. If too liquidy, leave lid off for the last 15 minutes.
  6. Warm tortillas in a dry skillet or comal over medium-high heat for about 30 seconds per side, until slightly charred and pliable. Keep warm in a clean kitchen towel.
  7. Assemble tacos by spooning the chicken mixture into warm tortillas and topping with desired toppings. Serve immediately.

Notes

For best results, use chicken thighs for juicier meat. Do not lift the lid during cooking. Shred chicken while still warm. Taste before adding extra salt as salsa can be salty. Double the batch for freezer-friendly meal prep. Leftover chicken keeps in the fridge for up to 4 days or freezer for up to 3 months.
