  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar

  • 4 cups broccoli florets (about 2 medium heads)
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • Cooked white rice or brown rice, for serving

Instructions

  1. Slice the beef: Place flank steak on a cutting board. Using a sharp knife, slice thinly against the grain into 1/4-inch thick slices. For easier slicing, partially freeze the steak for 20 minutes.
  2. Make the sauce: In the slow cooker, whisk together soy sauce, beef broth, brown sugar, minced garlic, grated ginger, sesame oil, rice vinegar, and red pepper flakes (if using) until brown sugar is mostly dissolved.
  3. Add the beef: Place sliced beef into the slow cooker and toss with the sauce until well coated. Spread in an even layer.
  4. Cook: Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until beef is fork-tender.
  5. Add broccoli: About 30 minutes before serving, add broccoli florets to the slow cooker. Stir gently, cover, and cook for 20-30 minutes until tender-crisp.
  6. Thicken sauce: In a small bowl, whisk cornstarch and cold water until smooth. Pour slurry into slow cooker and stir gently. Cook uncovered for 5-10 minutes, stirring occasionally, until sauce thickens to a glossy consistency.
  7. Taste and adjust: Adjust seasoning with more soy sauce, brown sugar, or red pepper flakes as desired.
  8. Serve: Spoon beef and broccoli over cooked rice. Garnish with sesame seeds, sliced green onions, and a drizzle of sesame oil if desired. Serve immediately.

Notes

For best results, slice beef against the grain. Add broccoli only in the last 30 minutes to prevent mushiness. Thicken sauce at the end with cornstarch slurry. Leftovers taste even better the next day. Store beef and broccoli separately from rice.
