A quick and healthy breakfast recipe featuring roasted vegetables and baked eggs all cooked together on one sheet pan for a fuss-free, wholesome meal.

  • 1 red bell pepper, sliced
  • 1 small zucchini, sliced into rounds
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon dried oregano or Italian seasoning (optional)
  • 6 large eggs, room temperature
  • 2 tablespoons grated Parmesan cheese (optional)
  • Fresh herbs like parsley or chives, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine sliced red bell pepper, zucchini rounds, halved cherry tomatoes, sliced red onion, and minced garlic. Drizzle with 2 tablespoons olive oil and sprinkle with salt, pepper, and dried oregano. Toss until veggies are evenly coated.
  3. Spread the vegetables evenly on a rimmed sheet pan in a single layer. Roast for 15 minutes, stirring halfway through, until veggies start to brown and soften.
  4. Carefully remove the pan from the oven and create six small wells in the roasted vegetables using a spoon.
  5. Crack one egg into each well. Sprinkle a little salt and pepper on the eggs, and if using, a pinch of grated Parmesan on each.
  6. Return the sheet pan to the oven and bake for 8-12 minutes depending on desired yolk consistency. Check at 8 minutes to avoid overcooking.
  7. Remove from oven and sprinkle chopped fresh herbs on top. Let sit for a couple of minutes to meld flavors.
  8. Serve directly from the pan with crusty bread or your favorite toast.

Notes

Use room temperature eggs for even cooking. Avoid overcrowding the pan to ensure proper roasting. Check eggs at 8 minutes to prevent overcooking. Loosely cover with foil if veggies brown too quickly. For dairy-free, omit Parmesan or use plant-based alternative. Frozen veggies can be used if fresh are unavailable.
