Ingredients

Scale
  • 1 cup pumpkin puree
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1/2 cup milk
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp milk (for glaze)
  • 1/2 tsp vanilla extract (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a donut pan generously with cooking spray or butter.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves until no clumps remain.
  3. In a separate large bowl, whisk pumpkin puree, sugar, egg, oil, and milk until smooth.
  4. Pour dry ingredients into wet ingredients and gently fold together with a spatula until just combined; do not overmix.
  5. Spoon batter into donut cavities, filling them about 3/4 full.
  6. Bake for 10-12 minutes or until a toothpick inserted into the center comes out clean.
  7. Let donuts cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. Whisk powdered sugar, milk, and vanilla extract to make the glaze.
  9. Dip the top of each cooled donut into the glaze and let excess drip off.

Notes

Ensure pumpkin puree is thick and not watery. Do not overmix the batter to avoid dense donuts. Check expiration dates on baking powder and soda for proper rise. Can be substituted with gluten-free flour or made vegan using flax eggs and plant-based milk.
