Creamy, pudding-like overnight oats with peanut butter and protein powder that thicken perfectly overnight. A make-ahead breakfast that takes 5 minutes to prepare and keeps you full until lunch.

  • 1/2 cup (50g) rolled oats
  • 1/2 cup (120ml) milk of choice
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) vanilla protein powder
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of sea salt

Instructions

  1. Grab a clean, dry 16-ounce mason jar or airtight container.
  2. Add 1/2 cup (50g) rolled oats to the jar.
  3. Sprinkle in 1 tablespoon (12g) chia seeds and a pinch of sea salt.
  4. Add 1 scoop (about 30g) vanilla protein powder. Break up any clumps with a spoon.
  5. Drop in 2 tablespoons (32g) creamy peanut butter.
  6. Pour in 1/2 cup (120ml) milk and 1/4 cup (60g) Greek yogurt.
  7. Drizzle in 1 tablespoon (15ml) maple syrup or honey.
  8. Put the lid on tightly and shake vigorously for about 30 seconds until everything is fully combined. Scrape bottom and sides if needed, then shake again.
  9. Refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  10. In the morning, stir well. If too thick, add an extra tablespoon or two of milk. Top with sliced banana, extra peanut butter, chopped peanuts, or fresh berries. Serve cold or microwave for 45-60 seconds if desired.

Notes

Don’t skip the shaking step—it emulsifies the peanut butter and distributes the protein powder evenly. Different protein powders absorb liquid differently; adjust milk in the morning if needed. Make a batch on Sunday for the week. Flavor improves on day two. For a nut-free version, use sunflower seed butter. For vegan, use plant-based milk, dairy-free yogurt, and vegan protein powder.
