Easy One-Pot Lazy Lasagna Skillet Recipe with Ricotta and Beef

A quick and comforting one-pot lasagna skillet with ground beef, ricotta, and melted cheeses that delivers all the classic lasagna flavors without the fuss of layering or boiling pasta separately.

  • 1 pound (450 g) ground beef (85% lean)
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 large garlic cloves, minced
  • 1 (28-ounce/800 g) can crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 8 ounces (225 g) uncooked lasagna noodles, broken into pieces
  • 2 ½ cups (600 ml) water or beef broth
  • 1 cup (240 g) ricotta cheese
  • 1 ½ cups (150 g) shredded mozzarella cheese
  • ½ cup (50 g) grated parmesan cheese
  • A handful of fresh basil, chopped (optional)

Instructions

  1. Heat 2 tablespoons olive oil over medium-high heat in a large deep skillet.
  2. Add 1 pound ground beef, breaking it up with a spatula. Cook for 5-7 minutes until no longer pink and slightly browned. Drain excess fat if necessary.
  3. Add 1 chopped medium onion and 3 minced garlic cloves to the beef. Cook for 3-4 minutes until softened and fragrant, stirring occasionally.
  4. Stir in 1 (28-ounce) can crushed tomatoes, 2 tablespoons tomato paste, 1 teaspoon Italian seasoning, and salt and pepper to taste. Mix well.
  5. Bring the mixture to a gentle boil, then reduce heat to medium-low and simmer for 5 minutes to thicken slightly.
  6. Break 8 ounces uncooked lasagna noodles into bite-sized pieces and stir into the sauce. Pour in 2 ½ cups water or beef broth and stir gently.
  7. Cover the skillet with a lid and simmer over low heat for 15-18 minutes, stirring occasionally to prevent sticking, until noodles are tender.
  8. Dollop 1 cup ricotta cheese over the mixture. Sprinkle 1 ½ cups shredded mozzarella and ½ cup grated parmesan evenly on top. Cover and cook for another 3-5 minutes until cheeses melt and bubble.
  9. Remove from heat and let rest for 5 minutes before serving. Garnish with chopped fresh basil if desired.

Notes

If noodles are still firm after simmering, add a splash more water and cover again for a few minutes. Use broth instead of water for extra flavor. For a crispier cheese topping, finish under a broiler for 2-3 minutes. To make gluten-free, use gluten-free noodles or zucchini ribbons. For dairy-free, substitute ricotta and mozzarella with dairy-free alternatives.
