  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1 teaspoon salt (kosher preferred)

  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 can (14.5 ounces) diced tomatoes, undrained (fire-roasted preferred)
  • 1 can (15 ounces) tomato sauce
  • 2 cups low-sodium beef broth (or chicken broth)
  • 1 package (20 ounces) refrigerated cheese tortellini
  • 1 cup shredded mozzarella cheese (freshly shredded)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Heat olive oil in a large deep skillet or Dutch oven over medium-high heat. Add ground beef and cook for 5-7 minutes, breaking it apart, until no longer pink and starting to brown. Drain excess fat if needed.
  2. Reduce heat to medium. Add diced onion and cook for 3-4 minutes until translucent. Add minced garlic, salt, pepper, Italian seasoning, and red pepper flakes. Stir constantly for 30 seconds until fragrant.
  3. Pour in diced tomatoes (with juices) and tomato sauce. Stir to combine, scraping up browned bits from the bottom. Add beef broth and stir. Bring to a gentle boil over medium-high heat.
  4. Gently stir in the entire package of refrigerated cheese tortellini, ensuring they are submerged as much as possible. Reduce heat to medium-low, cover, and simmer for 8-10 minutes until tortellini is tender but still al dente.
  5. Remove lid and stir. If sauce is too soupy, uncover and simmer for 2-3 more minutes. If too thick, add a splash of broth or water.
  6. Remove skillet from heat. Sprinkle shredded mozzarella evenly over the top, followed by grated Parmesan. Do not stir. Cover and let sit for 2-3 minutes until cheese is melted and gooey. Optionally, broil for 2 minutes for a browned top.
  7. Garnish with fresh chopped parsley. Let rest for 2 minutes before serving directly from the skillet.

Notes

For best results, use refrigerated tortellini (not shelf-stable). Do not rinse the tortellini; the starch helps thicken the sauce. Grate your own mozzarella for smoother melting. Let the dish rest for 2-3 minutes after cooking to allow the sauce to thicken and cheese to set. If tortellini is still hard after 10 minutes, add a little more broth, cover, and cook for 2-3 more minutes.
