  • 6 bone-in, skin-on chicken thighs (about 2 pounds / 900g)
  • 1.5 pounds (700g) baby potatoes, halved
  • 4 tablespoons (60g) unsalted butter, divided
  • 2 tablespoons extra virgin olive oil
  • Juice of 1 large lemon
  • Zest of 1 large lemon
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • A handful fresh parsley, chopped (for garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels. Season generously with salt, pepper, and thyme. Halve the baby potatoes evenly.
  2. Preheat oven to 425°F (220°C).
  3. Heat 1 tablespoon olive oil and 2 tablespoons butter in a large oven-safe skillet over medium-high heat. Once shimmering, add chicken thighs skin-side down. Sear for 5-7 minutes without moving until skin is golden and crispy. Flip and cook the other side for 3 minutes.
  4. Remove chicken to a plate, leaving fat and fond in the pan.
  5. Add halved potatoes and minced garlic to the skillet. Stir to coat in the buttery chicken fat, season lightly with salt. Cook for 5 minutes on stovetop, stirring occasionally.
  6. Pour in lemon juice and add lemon zest, stirring to scrape up browned bits. Add remaining 2 tablespoons butter and let melt to create a glossy sauce.
  7. Return chicken to pan, skin-side up, nestling among potatoes. Transfer skillet to preheated oven.
  8. Roast for about 20 minutes, until chicken reaches 165°F (74°C) internal temperature and potatoes are tender and golden.
  9. Sprinkle chopped fresh parsley over the top before serving.
  10. Optional: If chicken skin isn’t crispy enough after roasting, broil for 1-2 minutes watching closely to avoid burning.
