This easy one-bowl banana bread is incredibly tender, moist, and perfectly domed, made without any electric mixer. It’s the perfect quick bread for busy weeknights, using simple pantry ingredients and minimal cleanup.

Ingredients

Scale
  • 3 medium ripe bananas, mashed
  • 1/3 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup optional mix-ins (chocolate chips, chopped walnuts, or blueberries)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray. Optionally, line with parchment paper for easy removal.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth with a few small lumps.
  3. Add melted butter, sugar, egg, and vanilla extract to the mashed bananas. Stir until well combined.
  4. Sprinkle flour, baking soda, and salt over the wet mixture. Stir gently with a spatula using a folding motion until just combined. Do not overmix; a few lumps are okay.
  5. If using mix-ins, gently fold them in with a few strokes.
  6. Pour batter into prepared loaf pan and spread evenly. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil after 30 minutes.
  7. Let bread cool in pan for 10 minutes, then transfer to a cooling rack. Cool completely before slicing.

Notes

For a perfect crack down the middle, after 20 minutes of baking, quickly pull the pan out and run a butter knife down the center of the loaf about 1/2 inch deep. This encourages the crack to form in a straight line. The bread tastes even better the next day as flavors meld.
