  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (85g) chocolate chips (optional)
  • ½ cup (60g) chopped walnuts or pecans (optional)
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray, then line with parchment paper, leaving an overhang on the long sides.
  2. Mash the bananas in a large mixing bowl with a fork or potato masher until mostly smooth with a few small lumps.
  3. Add the melted butter and sugar to the bananas and stir until combined. The mixture will look slightly grainy.
  4. Add the eggs and vanilla extract, beating until the batter is smooth and glossy.
  5. Add the flour, baking soda, and salt on top of the wet ingredients. Gently mix the dry ingredients together on top, then fold everything together with gentle, sweeping motions until just combined. Do not overmix.
  6. If using, fold in chocolate chips, nuts, or cinnamon. Reserve a handful to sprinkle on top.
  7. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan gently on the counter to release air bubbles. Sprinkle reserved add-ins on top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. If the top browns too quickly, tent with foil at the 40-minute mark.
  9. Cool in the pan for 10 minutes, then use the parchment overhang to lift the bread onto a wire rack. Cool completely before slicing.
