These no-bake white chocolate avalanche cookies are the perfect last-minute dessert—crunchy, creamy, sweet, and salty all at once. Made with white chocolate, crispy rice cereal, and salted peanuts, they come together in about 15 minutes with no oven required.

Ingredients

Scale
  • 12 oz (340 g) white chocolate chips
  • 3 cups (80 g) crispy rice cereal
  • 1 cup (140 g) salted dry-roasted peanuts
  • 1 cup (50 g) mini marshmallows (optional)
  • 1 teaspoon (5 ml) vanilla extract
  • a pinch of salt

Instructions

  1. Line a large baking sheet with parchment paper or a silicone baking mat.
  2. Place the white chocolate chips in a large microwave-safe bowl. Microwave in 30-second intervals, stirring well after each interval, until most chips are melted and only a few small lumps remain. Stir until smooth (about 1.5 to 2 minutes total).
  3. Stir in the vanilla extract and a pinch of salt until glossy and well combined.
  4. Add the crispy rice cereal, salted peanuts, and mini marshmallows (if using) to the melted white chocolate. Fold gently with a silicone spatula until everything is evenly coated.
  5. Working quickly while the mixture is still warm, use a cookie scoop or two spoons to drop rounded mounds (about 2 tablespoons each) onto the prepared baking sheet, spacing them about 1 inch apart.
  6. Place the baking sheet in the refrigerator for at least 30 minutes (or 15 minutes in the freezer) until the cookies are firm to the touch.
  7. Serve cold or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 2 weeks, or freeze for up to 3 months.

Notes

Don’t overheat the white chocolate—use 30-second intervals and stir well. Work quickly once cereal is added. For a prettier presentation, press a few extra peanuts or marshmallows on top of each cookie before chilling. Let cookies sit at room temperature for 5 minutes before serving for best texture. If mixture becomes too stiff, microwave for 10 seconds to soften.
