  • 4 bone-in pork chops, about 1 inch thick
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/3 cup pure maple syrup
  • 2 tablespoons unsalted butter
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon cinnamon (optional)
  • 2 medium apples (Honeycrisp, Fuji, or Granny Smith), cored and cut into 1/2-inch wedges
  • 1 tablespoon butter, melted
  • 1 tablespoon maple syrup
  • Pinch of cinnamon
  • Pinch of salt

Instructions

  1. Take the pork chops out of the fridge about 15 minutes before cooking. Pat them dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and smoked paprika. Set aside.
  2. Preheat the oven to 400°F (200°C).
  3. Core the apples and cut into 1/2-inch wedges. In a small bowl, toss the apple wedges with melted butter, 1 tablespoon maple syrup, a pinch of cinnamon, and a pinch of salt. Set aside.
  4. In the same small bowl, whisk together 1/3 cup maple syrup, apple cider vinegar, Dijon mustard, and 1/4 teaspoon cinnamon (if using). Set near the stove.
  5. Place a large oven-safe skillet over medium-high heat and add olive oil. When the oil shimmers, carefully lay the pork chops in the skillet. Sear for 3-4 minutes without moving, until deep golden brown. Flip and sear the other side for 2-3 minutes.
  6. Reduce heat to medium. Pour the maple glaze mixture into the skillet around the pork chops. Add 2 tablespoons butter and let it melt into the glaze. Scatter the seasoned apple wedges around the pork chops.
  7. Transfer the skillet to the preheated oven. Roast for 10-12 minutes, or until the pork chops reach an internal temperature of 145°F (63°C) and the apples are tender and caramelized.
  8. Remove the skillet from the oven. Transfer the pork chops to a plate and tent loosely with aluminum foil. Let rest for 5 minutes.
  9. Spoon the apples and any remaining glaze from the skillet over the pork chops before serving.

Notes

For best results, use bone-in pork chops about 1 inch thick. Let the chops rest for 5 minutes after cooking to retain juices. If using thin-cut chops, reduce roasting time to 7 minutes. For a dairy-free version, substitute butter with coconut oil or plant-based butter. The glaze can be prepared up to 2 days ahead and stored in the refrigerator.
