Instructions

  1. Cook bacon slices or sausage patties in a skillet over medium heat until crisp or browned, about 5-7 minutes. Drain on paper towels to remove excess grease. For vegetarian options, sauté mushrooms or tempeh until golden.
  2. Split English muffins or bagels and lightly toast them until golden but still soft to avoid sogginess after freezing and reheating.
  3. In a bowl, whisk 8 large eggs with 2 tablespoons of milk or cream, salt, pepper, and a pinch of smoked paprika.
  4. Heat 1 tablespoon of butter in a non-stick skillet over medium-low heat. Pour in eggs and cook gently, stirring occasionally with a silicone spatula until soft curds form but eggs are still slightly runny, about 4-5 minutes. Remove from heat; eggs will finish cooking in residual heat.
