These breakfast burritos are a quick, hearty, and make-ahead solution perfect for busy mornings. Packed with sausage, eggs, cheese, and veggies, they reheat beautifully without losing flavor or texture.

  • 1 pound breakfast sausage (ground or crumbled sausage links)
  • 8 large eggs, beaten (room temperature)
  • 1 cup shredded cheddar cheese (about 110 g), sharp or mild
  • 8 large (10-inch) flour tortillas, warmed slightly before assembling
  • 1 small onion, finely chopped
  • 1 medium bell pepper, diced (red or green)
  • Salt and black pepper to taste
  • 1/2 teaspoon cumin (optional)
  • 1 tablespoon olive oil or butter (for cooking eggs and veggies)
  • Salsa or hot sauce for serving (optional)

Instructions

  1. Heat a large non-stick skillet over medium heat. Add the sausage, breaking it apart with a spatula. Cook for about 7-8 minutes until browned and cooked through. Drain excess fat if needed. Transfer sausage to a bowl and set aside.
  2. In the same skillet, add olive oil or butter. Toss in the chopped onion and bell pepper. Cook for 4-5 minutes until softened and fragrant. Remove and set aside with sausage.
  3. In a mixing bowl, beat the eggs with salt, pepper, and cumin. Pour eggs into the skillet over medium-low heat. Stir gently and frequently for 3-4 minutes until softly set but still moist. Remove from heat.
  4. Return sausage and veggies to the skillet with the eggs. Stir gently to mix all ingredients evenly. Sprinkle shredded cheddar cheese on top and let it melt for a minute.
  5. Warm tortillas slightly to make them pliable (wrap in damp paper towel and microwave 20 seconds). Spoon about 1/2 cup (120 ml) of filling onto each tortilla, spreading it down the center.
  6. Fold in the sides, then roll from one end to form a tight burrito. Wrap each burrito individually in foil if making ahead.
  7. Refrigerate for up to 4 days or freeze for up to 3 months. To reheat, unwrap and microwave for 1-2 minutes or bake at 350°F (175°C) for 15 minutes until heated through.

Notes

Do not overcook the eggs; they will continue cooking slightly when mixed with sausage and cheese. Warm tortillas before rolling to prevent cracking. For reheating, microwaves are quick but oven or skillet reheating crisps the tortilla nicely. Use foil to wrap burritos to maintain shape and warmth during storage.
