Easy Loaded Sausage Potato Soup for Game Day

A lighter, creamy loaded potato soup with turkey sausage and cauliflower rice that comes together in under 45 minutes. Perfect for game day or a cozy weeknight meal.

  • 12 oz turkey sausage, casings removed, crumbled
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1.5 lbs russet potatoes, peeled and diced into ½-inch cubes (about 3 medium)
  • 2 cups frozen cauliflower rice
  • 4 cups low-sodium chicken broth
  • 1 cup unsweetened almond milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ cup sharp cheddar cheese, shredded
  • ¼ cup plain Greek yogurt (full-fat or 2%)
  • 3 green onions, sliced
  • 2 slices turkey bacon, cooked and crumbled (optional)

Instructions

  1. Brown the sausage: Heat a large Dutch oven over medium-high heat. Add crumbled turkey sausage and cook, breaking it apart, until browned and cooked through (about 5 minutes). Transfer to a plate with a slotted spoon; set aside. Do not wipe out the pot.
  2. Sauté the aromatics: Reduce heat to medium. Add diced onion and cook 2-3 minutes until softened. Add minced garlic and cook 30 seconds until fragrant.
  3. Build the soup: Add diced potatoes, frozen cauliflower rice, chicken broth, smoked paprika, garlic powder, salt, and pepper. Stir, scraping up browned bits. Bring to a boil, then reduce heat to low, cover, and simmer 10-12 minutes until potatoes are fork-tender.
  4. Blend for creaminess: Turn off heat. Use an immersion blender to blend about half the soup in the pot, leaving some chunks. Alternatively, carefully transfer 2 cups of soup to a regular blender, blend until smooth, and return to pot. Repeat if desired.
  5. Add milk and sausage: Stir in almond milk and reserved cooked sausage. Warm over low heat for 2 minutes. Taste and adjust seasoning.
  6. Serve with toppings: Ladle soup into bowls. Top with shredded cheddar, Greek yogurt, sliced green onions, and crumbled turkey bacon if using.

Notes

For a thicker soup, let it simmer uncovered for 5 more minutes. For a thinner soup, add extra broth or milk. The cauliflower flavor becomes more pronounced after a day in the fridge; add extra smoked paprika when reheating to balance. Store leftovers in an airtight container in the fridge for up to 4 days. Freeze for up to 3 months.
