A light and refreshing white sangria with caramel, apple, and cinnamon flavors, perfect for fall gatherings. This accidental recipe turns a simple mistake into a crowd-pleasing drink that’s sweet but not cloying.

  • 1 bottle (750 ml) Sauvignon Blanc or Pinot Grigio
  • 1/4 cup caramel sauce
  • 2 tablespoons apple brandy or Calvados (optional)
  • 2 cups apple cider
  • 2 green apples, thinly sliced
  • 1 red apple, thinly sliced
  • 1 pear, thinly sliced
  • 1/2 cup fresh cranberries (optional)
  • 3 cinnamon sticks
  • 2 star anise pods (optional)
  • 1 vanilla bean, split, or 1 teaspoon vanilla extract
  • Ice cubes
  • Fresh mint sprigs (for garnish)
  • Extra cinnamon sticks (for garnish)

Instructions

  1. Prep the fruit: Wash and core the apples and pear. Slice into thin rounds or half-moons, about 1/4 inch thick. Toss with a squeeze of fresh lemon juice to prevent browning. Set aside.
  2. Make the caramel base: In a small bowl, warm the caramel sauce for about 10 seconds in the microwave until runny. Add the apple cider and apple brandy (if using) and whisk until completely smooth.
  3. Assemble the sangria: Pour the entire bottle of white wine into a large pitcher. Add the caramel-cider mixture and stir gently. Drop in the cinnamon sticks, star anise, and split vanilla bean. Add the sliced fruit and cranberries. Stir gently to distribute.
  4. Chill and infuse: Cover the pitcher and refrigerate for at least 2 hours, ideally 6 hours, to allow flavors to meld.
  5. Serve: Fill glasses with large ice cubes. Stir the sangria gently before pouring. Fill each glass about three-quarters full. Garnish with a fresh cinnamon stick and a sprig of mint.

Notes

Don’t skip the apple cider—it adds body and natural apple flavor. Warm the caramel sauce just enough to make it pourable (10 seconds in microwave) to prevent clumping. Use whole cinnamon sticks, not ground, to avoid cloudiness. For best flavor, let the sangria chill for at least 2 hours, ideally 6 hours. Remove mint sprigs if storing overnight as they turn bitter.
