  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 4 tablespoons unsalted butter, melted
  • 3 tablespoons fresh lemon juice (about 1 large lemon)
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried dill (or 1 tablespoon fresh dill, chopped)
  • 1/2 teaspoon lemon zest (optional)
  • Fresh parsley, chopped (for garnish)
  • Lemon slices (for serving)
  • Flaky sea salt (for finishing)

Instructions

  1. Preheat your oven to 400°F (200°C). Take the salmon fillets out of the refrigerator and let them sit at room temperature for about 10 minutes. Pat the fillets very dry with paper towels.
  2. Place the salmon fillets in a 9×13-inch baking dish, skin-side down if they have skin. Season the tops generously with salt, pepper, and garlic powder.
  3. In a small bowl, whisk together the melted butter, fresh lemon juice, minced garlic, Dijon mustard, dried dill, and lemon zest (if using) until well combined.
  4. Pour the lemon butter sauce evenly over the seasoned salmon fillets. Use a spoon or pastry brush to coat each fillet well.
  5. Bake for 12-15 minutes, depending on thickness, until the salmon flakes easily with a fork and the internal temperature reaches 125-130°F (52-54°C) for medium-rare or 135-140°F (57-60°C) for medium.
  6. Remove from the oven and let rest for 2-3 minutes. Spoon some of the pan sauce over the fillets. Garnish with fresh parsley and flaky sea salt. Serve with lemon slices.

Notes

For a browned top, switch to broil for the last 1-2 minutes. Double the sauce if desired. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat in a low oven (275°F) or skillet to avoid drying out.
