Transform leftover prime rib into a mouthwatering Philly cheesesteak with caramelized peppers, onions, and melted provolone on a toasted hoagie roll. This quick and easy recipe turns a simple leftover into a family favorite in under 15 minutes.

Ingredients

Scale
  • 1 to 1.5 pounds leftover prime rib, thinly sliced or shredded
  • 1 green bell pepper, thinly sliced
  • 1 yellow onion, thinly sliced
  • 4–6 slices provolone cheese
  • 4–6 hoagie rolls
  • 2 tablespoons olive oil or butter
  • Salt and black pepper to taste
  • 1/2 teaspoon garlic powder (optional)
  • 1 tablespoon Worcestershire sauce (optional)

Instructions

  1. Prep the Prime Rib (2 minutes): Take your leftover prime rib out of the fridge. Using a sharp knife, slice it as thinly as possible against the grain. Aim for about 1/8-inch thick slices. Set aside.
  2. Slice the Vegetables (3 minutes): Slice your green bell pepper and yellow onion into thin strips. Try to keep them uniform in size so they cook evenly.
  3. Heat the Pan (1 minute): Place your large skillet or cast iron pan over medium-high heat. Add 2 tablespoons of olive oil or butter. Let it heat up until the oil shimmers or the butter is melted and foamy.
  4. Sauté the Vegetables (5-7 minutes): Add the sliced onions and bell peppers to the hot pan. Spread them out in an even layer. Let them cook without stirring for about 2 minutes to get some nice browning. Then, stir and continue cooking until they are softened and starting to caramelize, about 3-5 more minutes. If using garlic powder, sprinkle it in during the last minute of cooking. Season with a pinch of salt and pepper.
  5. Add the Beef (2-3 minutes): Push the vegetables to one side of the pan. Add the sliced prime rib to the empty side. If using Worcestershire sauce, drizzle it over the beef now. Let the beef heat through for about 1 minute, then stir everything together until the meat is warmed through. Don’t overcook the beef; you just want it hot, not dried out.
  6. Assemble the Sandwiches (1 minute): While the beef is heating, split your hoagie rolls open. If you want them toasted, place them cut-side down in a separate dry pan or on a baking sheet under the broiler for 1-2 minutes until lightly golden.
  7. Melt the Cheese (1-2 minutes): Divide the beef and vegetable mixture evenly among the bottom halves of the hoagie rolls. Top each with 1-2 slices of provolone cheese. Place the sandwiches under the broiler for 1-2 minutes until the cheese is bubbly and melted, or cover the pan with a lid for the last minute of cooking to let the cheese melt from the steam.
  8. Serve Immediately: Place the top halves of the rolls on the sandwiches. Serve hot.

Notes

Slice the meat cold for easier handling. Toast the rolls to prevent sogginess. For a large batch, keep the cooked filling warm in a low oven (200°F) while assembling. The filling can be made a day ahead for better flavor.
